Moshe was told נָשִׂיא אֶחָד לַיּוֹם נָשִׂיא אֶחָד לַיּוֹם (one chief should present a gift each day, one day after the other; 7:11), and there were 12 chiefs, so that had to include a Shabbat. There’s a midrash (quoted in Da’at Zekeinim on Bemidbar 7:48) that it was Efrayim who brought the gift on Shabbat. Can you guess why? Take a look at Bemidbar 7:48.
